Mexican Stuffed Peppers
The Mexican version of traditional stuffed peppers
4 Bell Peppers (colored peppers make more fun!)
1 lb Ground Beef (All measurements are approximate)
Can of Corn (traditional or fiesta)
1- 1 1/2 c Minute Rice
- Combine ground beef, rice, salsa, corn, and cheddar cheese.
Slice peppers length wise.
Stuff each pepper with mixture.
Cover with aluminum foil.
Cook at 350 degrees for approximately 30 minutes.
Uncover, cover in cheddar cheese.
Return to oven for approximately 10 more minutes until cheese is bubbly!
